MONDONGO

INGREDIENTS:

  • 150  gr chickpeas
  • 1 kg beef tripe
  • 40 gr chopped jamos ham
  • 75 gr chorizo sausage
  • 75 g de tomato sauce
  • 2 potatoes
  • 1 onion
  • 2 dientes de ajo.
  • Spices: mint, pepper, olive oil and salt

PREPARATION:

Clean the tripe, cut into cubes, let it boil in a pot with the chickpeas, and once cooked add the potatoes. 

- Sauté the garlic and onion. Once golden add the tomato sauce, ham, chorizo and paprika and let them fry a little longer

- Add the sauce to the chickpea pot and season with salt, mint and pepper.
