PAN DE CALATRAVA

INGREDIENTS:

  • 4 or 5 cupcakes
  • 8 eggs
  • 1 liter of milk
  • 200 gr sugar
  • lemon skin
  • 1 cinnamon stick
  • liquid caramel to cover the bottom of the pan

PREPARATION:

- Spread the caramel on the base of a pan and crumble the muffins, bread or cake over it. Set the oven to preheat at 180 degrees.

- Beat the eggs up with the sugar, milk, some lemon skin and the cinnamon stick broken down into bits.

- Before the milk boils, strain the lemon peel and cinnamon and pour the contents into the mold, making sure that the crumbles soak in. Incorporate the mold in the oven to do for 40 minutes in a water bath.

- To verify that it is ready and cooked, pinch it with a toothpick in the center, if it comes out clean, remove the mold from the oven and introduce 1 hour in the fridge, so it's ready to unmold and enjoy.
