INGREDIENTS

  • 650g potatoes
  • 7 fresh eggs
  • 2 medium-sized onions
  • Thick salt
  • Olive oil

INDICATIONS

First, we peel the potatoes and cut them into small slices, and peel the onions and chop them into very little pieces. Heat a frying pan with quite a bit of olive oil and put the potatoes with the onions to fry. Once the potatoes are well fried, take them out and strain them to remove the olive oil.

On the other hand, we need to beat the eggs in a bowl with a pinch of salt, and add them to the potatoes and the fried onions, and mix it all together.

Now, we heat a frying pan with the size of the omelette we want to have with a bit of olive oil and add the mixture and let it be cooked on medium heat. When the egg is set on the lower part of the mixture, we flip it all very carefully with the help of a plate bigger than the frying pan. Finally we let the other part of it get set, and the omelette will be done.
