- 500gr ground almond
- 250gr sugar
- 8 eggs
- Cinnamon and grated lemon rind
PREPARATION
First of all, beat the eggs in a bowl with sugar and then add almond flour and grated lemon rind. Blend all the ingredients until they are a fairly homogeneous mix. Pour button-sized portions of dough in small bowls greased with butter. Sprinkle a little cinnamon and almond. Cook over a low heat until they are semi-dried.
Traditionally, the portions are left prepared and place in the oven the following day. This way they get dried.
